(Catastrophic) Cake Balls

This past summer, I ate my first cake pop at Starbucks. After I scarfed it down, I died, went to heaven, came back again and decided I needed to learn how to make them. Stat.
I have been trying to make my own version of cake balls for the last few weeks now – especially after hearing how EASY it was to make them. To prepare for my big cake-ball-baking day, I watched endless YouTube “how-to” videos and read tons of different recipes. Never in a million years did I think that something so simple could be messed up so badly. Don’t let the pictures fool you, I took a million pictures so that I could use at least one good one that didn’t look like a total epic failure.
Looking back, I think I made a series of bad choices with the kind of cake (don’t use extra moist cake), the kind of icing (if you are a newbie, don’t use dark coloured cake with light coloured icing) and the steps I took to ice them (don’t use 2 spoons to swish it around in the icing) using the tools that I had.
Meh, you live and learn. And hey, I had a lot of fun-especially because MGMT’s – Electric Feel was blaring in the background the whole time. This is also a really great activity to do with kids. My little buddy Sophia (4 years old, daughter of my friend Michelle) would be the perfect partner in crime for making a batch of these.
I hope I haven’t steered you away from making these little balls of fun. Just do what I say and not what I do (er..did).
P.S. They were, indeed, a hit – despite the wonky icing. Just keep in mind some words of wisdom, below.
Ingredients:
- 1 package of cake plain chocolate or vanilla. Don’t use extra moist cake. Also, use vanilla if you want to use light colored icing.
- 1 (16 ounce) container prepared frosting- chocolate or vanilla-which ever you prefer
- Chocolate bark or Wiltons candy melts for the icing (if you go with candy melts, you can get a variety of colours. Available at Michaels or Bulk Barn)
- Prepare the cake mix according to the directions on the box. When cake is done, let is cool for at least 1 hour.
- After cake is cool, crumble the cake into fine pieces into a large bowl.
- Stir in the frosting until very well blended-you’ll use about 3/4 of the entire container.
- Use a wax-paper lined baking sheet and roll mixture into 1-1/2 inch balls.
- Freeze the balls for a couple of hours so they get firm (I skipped this step = bad decision).
- After 2 hours, start to melt the chocolate bark or candy melts in a glass bowl in the microwave, or in a double boiler.
- Dip the balls in chocolate using a toothpick or fork to hold them. DO NOT use a spoon, you will get a puddle of icing all around the bottom of the cake ball.
- Place on waxed paper . Add sprinkles (immediately), if desired.
